Chicken Penne in a Light Parmesan-Dill Sauce

Ingredients

  • 2 Chicken , boneless, skinless, diced
  • 1 C Brown Rice & Quinoa Penne , organic
  • ½ Eggplant , diced
  • ¼ C Cherry Tomatoes , halved
  • ¼ C Artichoke Hearts , diced
  • 2 T Dill
  • ¼ C Parmesan , grated
  • ¼ C Extra Virgin Olive Oil
  • 3 T Lemon , juice
  • 1 tsp Worcestershire Sauce
  • 1 tsp Paprika
  • 1 pinch Cayenne Pepper
  • 2 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 2 tsp Garlic , minced
  • to taste Sea Salt
  • to taste Black Pepper

Method

  1. 1

    Season the diced chicken with the minced garlic, cayenne, chili powder, garlic powder, salt, and pepper. Let it soak up the spices for 15–20 minutes.

    Make the Parmesan-dill sauce: stir together the olive oil, parmesan, lemon juice, dill, and Worcestershire. Let the energetics mingle for 5–10 minutes.

    Sauté the diced eggplant in a drizzle of oil over medium-high heat, about 3 minutes, until it begins to flavor the pan. (Now is a good time to start a salted pot of pasta water.)

    Add the cherry tomatoes and diced artichoke hearts and let their juices mingle with the eggplant. When the tomato skins begin to wilt, remove the vegetables to a bowl.

    Cook the penne per the package (about 13–15 minutes — I skip al dente with the brown-rice base, but you do you) and drain.

    In the same pan, sear the spiced chicken in a little oil for 3–5 minutes; it does not need to be fully cooked yet. Reduce the heat to low, return the vegetables to the pan, and smother everything in the Parmesan-dill sauce. Let it simmer low and a little loose, then toss with the drained penne and serve.
