Heart Healing Grilled Artichokes
A flowering vegetable that hacks the heart. Grilled artichokes to calm emotional chaos and clear the heart of old weight — one charred, tender petal at a time.
I've been making this one for fifteen years. It began the way the best recipes do: a neighbor dropped a bag of freshly picked artichokes on my doorstep and I stood there thinking, what on earth do I do with this thing? I taught myself to prep them, fell completely in love, and a few years later found myself grilling them to the delight of an entire dining room as a Chef.
There's a reason we call them artichoke hearts.
To me, the artichoke is the union of hope and peace held in the center of the body — an overflow of prosperity and love. Cooking one with intention is a chance to reach the true energetic of the heart: to unravel its layers of protection and clear away the fear, pain, and resentment we store there. The body is self-healing. Our job is simply to command its power and point that healing in the right direction.

Ingredients
- ◆ 2 Artichoke , halved
- ◆ 1 T Extra Virgin Olive Oil
- ◆ 2 Garlic , whole cloves
- ◆ 1 tsp Onion , minced
- ◆ 1 tsp Shallot , minced
- ◆ ¼ Lemon , juiced
- ◆ 1 tsp Sea Salt
- ◆ ½ tsp Black Pepper
- ◆ 1 T Chili Powder (optional)
- ◆ 1 tsp Chipotle , pepper (optional)
Method

Begin with the Preparation Command to clear your ingredients. Rinse the artichoke heads and speak your intention into the water — water remembers, and it will hold what you give it.

Dry the artichokes. With kitchen shears, trim the thorny tip off each petal (about 1–1½ inches), using a knife for the spiky crown. Cut away the tough stems.

Slice each artichoke in half from top through stem — it takes a little elbow grease. Scoop out the fuzzy choke and needles with a spoon and discard. Rub each half with olive oil, inside and out, and season with a pinch of salt and pepper.

Fill a 6-quart pot with 2–3 cups water and your aromatics: a little olive oil, the garlic cloves, minced onion, minced shallot, and the lemon juice. For a kick, add the chili and chipotle powder. Bring to a light simmer.

Set a steamer insert in the pot, add the artichoke halves, cover, and steam 8–12 minutes — they are ready when a fork slips easily from the heart.

Heat a grill or cast-iron grill pan to medium-high. Lay the halves heart-side down at a 45° angle; char 1–2 minutes, rotate 90° for another minute, then flip and char the petals. Serve with your favorite aioli — or perfectly bare.
