A summertime juicy pear & pepper jack turkey burger to connect and unify your tribe.

When someone says "turkey burger," do you even care? Honestly, I usually don't — I'm already bored. So this intentional recipe set out to challenge my boredom, and it won.

In the natural world, the turkey is a strong symbol of abundance and of sharing that abundance with your tribe. Turkey burgers, though, tend to be dry, under-seasoned, and an underwhelming stand-in for the beef we love. This one was born from exactly that frustration. I wanted a burger badly — and more than that, I wanted something to transmute some heavy energy with. My communication had been a little off-kilter lately, so: enter the Pear and Pepper Jack T-Burger.

Big, juicy, and handled with care

These boys are big — think 8–10 oz patties, full of diced pear, raw onion, and spices, smothered in melty pepper jack with all the right accoutrements. (Make them smaller if you like; just cut the grill time so they don't dry out.) The trick is to treat the turkey like delicate bread dough — easy does it. How you handle the meat decides whether it ends up tough or juicy, so I get in there with my hands rather than a fork, both for textural control and to send my intention straight through the protein with my own Peach-Powerful touch. Pro tip: if it looks or feels like mush, it's going to be tough.

For the vegan and gluten-free tribe, the swaps are easy: vegan cheese and mayo, an impossible or black-bean patty mix, GF breadcrumbs, and GF buns. The point is to enjoy this juicy spice bomb while connecting with your people. Ingredients

  • 1.5 lbs Turkey , ground
  • ¼ C Mayonnaise , vegan optional
  • ¼ C Breadcrumbs , plain, GF optional
  • ¼ C Red Onion , raw, minced
  • ½ Bartlett Pear , small dice
  • 1 T Oregano , dried
  • 1 tsp Garlic , fresh, minced
  • 2 tsp Paprika
  • 2 tsp Chili Powder
  • to taste Sea Salt
  • to taste Black Pepper
  • 4 slices Pepper Jack Cheese
  • 4 Brioche Buns , GF optional
  • to dress Lettuce
  • to dress Tomato
  • to dress Onion
  • to dress Pickles
  • to dress Avocado
  • to dress Ketchup / Mustard

Method

  1. 1

    Break up the 1.5 lbs of ground turkey in a large bowl.

    Mince 1 tsp garlic and ¼ C red onion; set aside.

    Small-dice ½ Bartlett pear into ¼-inch cubes; set aside.

    Measure out the mayo, breadcrumbs, oregano, paprika, chili powder, and salt & pepper.

    Add the seasonings, diced pear, mayo, and breadcrumbs to the turkey all at once. Mix slowly and lightly with your hands until just combined, then let it sit 10–12 minutes for the flavors and intentions to mingle.

    Heat a grill pan or skillet over medium-high and lightly oil it (or heat an outdoor grill to 400°F). Form softball-size balls, then press each into a patty with your palm.

    Grill the patties, pressing the centers lightly, then lower to medium and cook about 4 minutes per side (2 minutes for smaller burgers). When flipped and nearly done, top each with a slice of pepper jack, turn off the heat, and let the cheese melt off the heat.

    Dress your buns with ketchup or mustard, lettuce-tomato-onion, pickles, red onion, and avocado. Serve with fries, chips, or a salad — as fancy or simple as you like. You hold the Peach Power.
