Bison Bolognese
Ancestral and abundant — a one-pan bison bolognese to shift your trajectory for the better.
The buffalo has always been an animal connected to divinity and creation — it provides everything you need to survive, which is why the Natives of Turtle Island held it in such high regard. Its meat nourished; its hide became clothing and shelter; its bladder carried water; its bones and horns became tools; its organs became pouches; its fat became soap. Nothing wasted. Every part intentional.
My ancestors used every part of this majestic animal for the betterment of their families and villages — a gift from the great Mother. As a descendant of the Seminole tribe, I bring bison (a close cousin to the Buffalo) into many Purple Peaches recipes for that profound connection to the land of my ancestry. Big Food and corrupt farming have lessened the value of this beautiful animal, and it's time we took that power back.
Its meat sings a song of abundance, love, and community as old as the land that nurtures it. Used with love and intention, it can wash away the manipulation and trauma of industrial practices and bridge the strength of the buffalo back into your hands — shifting any energy center into symbiosis, and simplifying even the most complicated family unit. Ingredients
- ◆ 1 lb Bison , ground
- ◆ 4–5 Mini Sweet Peppers
- ◆ 16 oz Tomato Pasta Sauce , roasted garlic
- ◆ 1 tsp Oregano
- ◆ ½ tsp Basil
- ◆ ½ tsp Thyme
- ◆ 1 tsp Garlic Powder
- ◆ 1 tsp Paprika
- ◆ ½ tsp Chili Powder
- ◆ 1 tsp Sea Salt
- ◆ ½ tsp Black Pepper
- ◆ a handful Linguine , to serve
- ◆ to garnish Parmesan
Method

Break up the ground bison in a bowl and season with the sea salt, black pepper, chili powder, paprika, garlic powder, thyme, basil, and oregano.

Slice the tops off the mini peppers, deseed if you like, and quarter them, removing the bitter white parts. Set aside.

Heat a large skillet over medium-high. Brown the bison 5–7 minutes until fully cooked, then remove to a paper towel to drain excess grease.

Add the peppers to the same skillet — there is flavorful "fond" left behind — and cook until they soften and release their oils. Stir in the pasta sauce, scraping up the fond. Lower the heat, return the bison, and stir.

Cover and simmer untouched for 20 minutes. Uncover, stir, cover again, and simmer another 20.

Meanwhile, bring a pot of water to a boil with 1 tsp sea salt and 1 T olive oil or butter. Add the linguine and cook 10–12 minutes to your liking, then drain.

Twirl the linguine onto plates, making a well in the center. Ladle the bolognese from the center outward, garnish with fresh Parmesan, and enjoy.
